Instructions:
- Prepare the wet ingredients:
- In a large mixing bowl, whisk together the kefir, milk, eggs, sugar, oil, and vanilla extract until smooth.
- Mix the dry ingredients:
- In another bowl, sift together the flour, baking powder, baking soda, and salt.
- Combine:
- Gradually add the dry ingredients to the wet mixture. Stir just until combined. The batter should be thick and slightly lumpy. Avoid overmixing to keep the pancakes fluffy.
- Rest the batter:
- Let the batter rest for about 5 minutes. This helps activate the baking soda for a fluffier texture.
- Heat the pan:
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
- Cook the pancakes:
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 1–2 minutes until golden.
- Serve:
- Stack the pancakes and serve warm with your choice of toppings, such as maple syrup, fresh berries, powdered sugar, or even a dollop of kefir!
